Angel hair pasta with shrimp, peppers & tomatoes

This pasta dish comes from Gordon Ramsay’s Cookalong Live. Designed as the starter (or appetizer) for the program…wait, starter? Dude, this was a whole meal! Don’t listen to Ramsay. This is one of those times that he was just wrong

Cookalong Live was a cool concept. Angry Michelin star chef tones done his gruff attitude to goof off with celebrities and cook a three-course meal. Tons of hilarity with Cedric the Entertainer. Har har! But for serious, the concept of the show was great. Shame they haven’t done one since.

Angel hair pasta with shrimp, peppers & tomatoes

Serves 4

7 oz. angel hair pasta
1 red chili pepper, thinly sliced
2 large garlic cloves, crushed
1/2 lb. medium size, raw, peeled shrimps
1/4 cup white wine
1 large tomato, diced
1 lemon
fresh basil
3 scallions
salt and pepper
olive oil

Boil the pasta in a rolling boil of salted water. How long? Read the directions! I don’t know what you bought!

Heat a large saute pan over medium high heat. Add 2 tablespoons of olive oil. Add the chili and garlic to the pan and saute for a minute before adding the shrimps. Toss them and season before adding the wine. Next up, add the tomatoes to the pan and cook for another 2 to 3 minutes, then add the scallions and some chopped basil.

Drain the pasta and drizzle with olive oil, then grate with lemon zest. Add to the sauce and mix to coat. Finish with a squeeze of lemon, and garnish with basil.

Serve.
