Cowboy cups

If you think a burger is just meat, cheese and vegetables, you’re a damn fool. The Cowboy Burger is so much more than a burger. And it’s the favorite food of choice for Philadelphia Phillies outfielder and awkward baby giraffe-like runner Hunter Pence!

This is an amuse bouche Cowboy Burger, which is douchey foodie speak for bite-sized beef cup.

I made these for the Super Bowl, but we never got around to them because of stupid soft pretzels. So, for the record, soft pretzels are banned from this point forward —- unless I make them.

1/2 onion, thinly sliced
1 egg, beaten
breadcrumbs
vegetable oil

30 fillo / phyllo cups
3/4 cups ground beef, cooked
1/3 cup BBQ sauce
2 jalapenos, chopped
1/4 cup cooked bacon, chopped
1/3 cup cheddar, shredded

In a large pot, heat the vegetable oil to 375 degrees. While that heats, cut the onion very thinly. If you have a mandolin, I suggest cutting the onion down to paper thin straws. Dredge the onion in flour, egg, then breadcrumbs. Fry for a few minutes, then drain on paper towels.

In a large skillet, cook beef over medium heat. Drain the fat and stir in BBQ sauce, jalapenos and cooked bacon. Simmer over low heat for a few minutes to incorporate, then remove from heat.

Once the beef mixture has cooled slightly, mix with the shredded cheddar.

Spoon some of the mixture into fillo cups. Finish with a sprinkle of cheese if you like, then top with a fried onion straw. Bake for 8-10 minutes in a 350 degree oven.

Serve.
