Apple slices with goat cheese & pistachios

This is a nice a healthy snack for when you realize that the Phillies awful playing this season is causing you to put on weight.

Today’s recipe comes from the Whole Foods app, available on both the RyPhone and the RyPad. Or iPhone or iPad if you’re not the total dweeb I am. The app has a function that lets you look for recipes based on the food you have “on hand.” In this case, I had some goat cheese lying about.

NOTE: This isn’t a meal. It’s a snack. One can’t survive on this alone.

Makes 24 pieces

1/4 cup creamy goat cheese spread or fresh
2 Granny Smith apples, cored and cut into 24 slices
2 tbsp. pistachios, finely chopped
2 tbsp. candied ginger, finely chopped
lemon juice

Spread 1/2 tsp. of goat cheese onto each apple slice, then arrange on a platter. drizzle some lemon juice on the apple slices to keep them from browning while you arrange the toppings.

Ready to arrange the toppings? Great. Easy. Top the ginger and the pistachios on the goat cheese.

Garnish with plate with scatter pieces of the nuts and candy too. Looks solid.

Serve.
