Gorgonzola-garlic dip

There are two things in this world that I will always love without question. Cheese. And dip.

8 oz. Gorgonzola cheese, crumbled
1/3 cup red onion, minced
1/2 cup fresh parley, minced
2 garlic cloves
2 tbsp. red wine vinegar
1 tbsp. lemon juice
1/3 cup olive oil

Mix the cheese, parsley and garlic together. In another bowl, whisk the vinegar, lemon and oil, then mix all together. I used a processor to make it into a paste. Refrigerate for at least 4 hours, or longer.

Serve.

At room temperature. I used pita chips. I imagine it would be good with celery or something. To be honest, you might want some healthy component for this.
