Lemon-pepper linguine with parmesan & arugula

This dish is pretty basic, but you can throw it together in like 10 minutes. Seriously. I went home for lunch, made this, then went back to work. What’d you have? A sandwich?

Serves 4

1 lb. linguine
1/4 cup butter
1-1/4 cup parmesan cheese, grated or shredded
1 cup arugula, chopped
juice of 1 lemon
zest of 1 lemon
1-1/2 tsp. pepper

Bring a pot of salted water to a boil. Follow the instructions of the box here for al dente. I cooked some fresh pasta for about 6 minutes.

Drain the pasta in a strainer and mix in the butter. The heat from the pasta should melt it so that you have a nice coating on it. Season it with pepper and cheese, then add the arugula. Finish with lemon juice and lemon zest.

Garnish with a lemon slice.
