Mango, avocado and smoked chicken salad

A light and refreshing salad before you start drinking and pigging out this weekend.

Ever since I started food blogging, I’ve noticed that I’m getting a little soggy in the midsection.¬†Yeah, it’s the blogging. Not the sports, snacks and beer. Not those.

This one’s a great salad that looks like it wouldn’t be too filling, but made for an excellent dinner. And since it’s from Gordon Ramsay’s Healthy Appetite, it’s probably good for you. So that’s a win.

Serves 4

2 medium, firm but ripe mangoes
2 ripe avocados
lemon juice
10 oz. smoked chicken breasts
2 tbsp. pine nuts, toasted (optional)
2 tbsp. orange juice
2 tbsp. lemon juice
1 tbsp. wholegrain mustard
2 tbsp. extra virgin olive oil
2 tbsp. avocado oil (or olive oil)
salt and pepper

Peel the mangoes and cut into thin slices. Arrange on four serving plates.

Halve the avocados and remove the stone. Peel off the skin and slice into strips. Squeeze over a little lemon juice to stop the avocado from discolouring and getting all brown. That’s not healthy looking. Arrange the avocado over the mango.

Cut the chicken into thin slices and divide between the plates, then finish with arugula.

To make the dressing, whisk the ingredients together. Season. Spoon the dressing over the salad and finish with pine nuts, if using.
