Chicken, spinach and cheese dip

Cheese dip isn’t exactly diet food. But this has spinach, so…

This one comes from a very special guest chef: my sister. We spend a lot of time talking about food, and she’s always encouraged my aspirations in the kitchen. She came up with this recipe and sent it along…back in the beginning of 2010.

That is not a typo. It took me nearly three years to make and post this. Trust me though, it’s not because I didn’t like it. Between me, the girlfriend and the roommate, this didn’t last very long.

(This recipe can be made with crab and add 2 tbsp. seafood seasoning.)

1/2 lb. sour cream
1/2 lb. cream cheese
2 tsp. Worcestershire
5 oz. fresh spinach, chopped
1/2 tsp. lemon juice
3/4 lb. cooked chicken
1 oz. smoked gouda, shredded
5/6 cup parmesan cheese, shredded

Combine gouda, sour cream, cream cheese, worcestershire, 1/2 cup parmesan cheese and lemon juice. I did this in a processor with a dough paddle to whip everything, then folded in the chicken and spinach.

Bake at 350 in shallow baking dish until bubbly, then top with 1/3 cup parmesan cheese, and bake until browned.

Garnish with diced tomato if you’d like, and fill a bowl with crackers, bread, veggies or chips.

Serve.
