This is some really spicy mayonnaise.
In the last month or so, I’ve been pretty hardcore about my diet and my exercise. With two 5-mile runs, and the potential to be running the 10-Mile Broad Street Run in Philadelphia next May, I don’t have any other choice. But in this last month, I’ve lost around 11 pounds, not counting gaining and losing the same couple here and there (curse you football season!).
So obviously the best way to treat myself was to throw together a big ass bowl of spicy mayonnaise. Obviously.
1 cup mayonnaise
2 chipotles in adobo sauce
1 tbsp. adobo sauce
1/2 lime, juice
salt and pepper
Nothing too difficult here. Put all of these ingredients in your food processor and puree. Season.
With food. No one wants just a bowl of mayonnaise for dinner.
Well, maybe almost no one.
