Penne w/ spinach sauce

More green pasta!

This is another healthy pasta dish, coming this time from Giada DiLaurentiis. In spite of having a cheese sauce, the dish is healthy because it incorporates pasta water in place of any type of cream to finish the sauce. In addition, Giada uses whole wheat pasta and fat free ingredients wherever possible, which is always a good call, diet or no diet.

Serves 6

1 lb. penne
3 garlic cloves
2 oz. goat cheese
1 oz. cream cheese
3/4 tsp. salt
1/2 tsp. black pepper
6 oz. spinach
2 tbsp. Parmesan

Boil the penne in a large pot of salted water until al dente, which is Italian for “read the directions on the pasta box to tell you how long it takes to cook.” When the pasta is done, reserve some of the pasta water. That’s what’s going to thin out your sauce.

For the “sauce,” mince the garlic in a food processor, then add the goat cheese, cream cheese, salt and pepper, and half of the spinach leaves. Blend until the mixture is smooth and creamy,

Place the other half of the spinach in a large bowl. Spoon the pasta atop the spinach and add the cheese and spinach mixture. Toss to coat, adding some of the pasta water to moisten. Season.

Finish with Parmesan.
