I’m a big fan of Richard Blais, even if I can’t do 1/3 of the stuff he does in the kitchen. Seriously, I was awful at science. I got a 6 on a chemistry test once. 6! Out of 100! So Blais’ scientician methods don’t really play at my house. I’m sorry, but I just have nowhere to store liquid nitrogen.
No matter what you feel you can or can’t do to make this one, you can at least try the parts you’re comfy with. But I definitely wouldn’t eat it alone. Someone needs to drive you to the emergency room.
