Grilled chicken wings w/ citrus-honey glaze

More wings and beer!

Yards is officially my new favorite beer, and has been for the better part of the last year. The Philadelphia-based brewery’s take on the pale ale, aptly named the Philadelphia Pale Ale, pairs great with some sweet and sour flavors. And since it’s still football season, we’re serving the beer up with a different twist on chicken wings specifically for Game Day.

In addition, because the beer is a little bit lighter, we’re passing on the deep fryer and grilling these wings. So grab a 6-pack, and let’s get drunk started.

Grilled chicken wings w/ citrus-honey glaze

Serves Wing Enthusiasts

1 quart orange juice
1/4 cup honey
1 tbsp. adobo sauce
salt and pepper

chicken wings
1 tbsp. thyme
1 tbsp. parsley
juice of 1 lemon
lemon zest
salt and pepper
canola oil

Yards Philadelphia Pale Ale (optional)

Start by seasoning the wings in bowl or bag, starting with the canola oil and lemon juice, then adding the thyme, parsley, lemon zest, salt and pepper. Toss the wings to coat with the ingredients, then toss them onto the grill over medium-low heat. Cooking them over such a low temperature will render the fat and slowly give you a nice and crispy chicken wing.

While the wings cook, reduce a quart of fresh orange juice. Once the juice has reduced and slightly thickened, add the honey and adobo sauce. Season to taste.

Once the wings are cooked, remove them from the heat, then brush them with the glaze.

Serve.
